Ingredients

6 servings
  • 1 pound boneless and skinless tilapia fillets, (cut into 2 inch pieces, rinsed and patted dry)
  • olive oil, salt and pepper
  • ¾ cup sour cream
  • ¾ cup + 2 tablespoons fresh salsa
  • 12 medium corn or flour tortillas, (warmed)
  • 1½ cups shredded cabbage
  • Optional garnishes: cheese, cilantro, lime, avocado

Steps

  1. Heat the broiler, with rack in highest position.

  2. Place the fish on a rimmed baking sheet; drizzle with olive oil and season with salt and pepper. Broil until the fish is lightly browned on top, 5 to 10 minutes, until the flesh is opaque throughout.

  3. Meanwhile in a small bowl, mix the sour cream with 2 tablespoons of salsa.

  4. Divide the fish evenly among the tortillas and top with shredded cabbage, sour cream and fresh salsa.
