Peach Salsa

- 2 cups frozen peaches (thawed or drained canned peaches)
- 2 tablespoons fresh lime juice
- 1 red bell pepper (finely diced)
- ¼ cup finely diced red onion
- 1 jalapeño ( seeded and minced)
- 3 tablespoons chopped fresh cilantro
- ½ tablespoon olive oil
- ¼ teaspoon chili powder
- ¼ teaspoon salt (more to taste)
Steps
Dice the peaches and add to a bowl. Toss with lime juice.
Add bell pepper, onion, jalapeno, cilantro, olive oil, chili powder, and salt. Toss to combine and let rest 15 minutes before serving.
Serve with tortilla chips or spoon over grilled chicken or fish.
