Ingredients

  • 2 cups frozen peaches (thawed or drained canned peaches)
  • 2 tablespoons fresh lime juice
  • 1 red bell pepper (finely diced)
  • ¼ cup finely diced red onion
  • 1 jalapeño ( seeded and minced)
  • 3 tablespoons chopped fresh cilantro
  • ½ tablespoon olive oil
  • ¼ teaspoon chili powder
  • ¼ teaspoon salt (more to taste)

Steps

  1. Dice the peaches and add to a bowl. Toss with lime juice.
