Ingredients

4 servings
  • 1 tablespoon butter
  • 1 onion (diced)
  • 1 carrot (diced)
  • 1 rib celery (chopped)
  • 8 ounces mushrooms (sliced or 1 can mushrooms)
  • 6 cups beef broth (or vegetable broth)
  • ⅔ cup pearl barley
  • 1 bay leaf
  • 1 ½ teaspoons Worcestershire sauce
  • 1 teaspoon soy sauce
  • ¼ teaspoon dried thyme leaves

Steps

  1. Cook onion, carrot and celery in butter in a large saucepan over medium heat until onion is tender. Add mushrooms and cook 5 minutes more.

  2. Stir in remaining ingredients and bring to a boil.

  3. Reduce heat and simmer 30-35 minutes or until barley is tender.

  4. Discard bay leaf and serve.
