Ingredients

  • 1 large lemon, (juiced)
  • 2 tablespoons honey
  • freshly ground black pepper, (to taste)
  • ½ teaspoon kosher salt
  • 6 cups mixed greens
  • 1 bunch (or one bag) arugula
  • 3 large tomatoes, (chopped)
  • ½ large red onion, (thinly sliced)
  • ¾ cup shaved fresh Parmesan cheese

Steps

  1. In a small bowl, whisk together the olive oil, lemon juice and honey. Add salt and pepper to taste.

  2. In a large bowl, toss the salad ingredients together (through red onion). Add the dressing and lightly toss again.

  3. Divide the salad among salad plates and garnish with shaved Parmesan cheese.
