Low Fat Sloppy Joes
Veggies are tucked in these sloppy joes, but your kids will never know!

Ingredients
6 servings
- 1 teaspoon extra virgin olive oil
- 2 cups finely chopped mushrooms
- 1 cup finely chopped sweet onion
- ½ cup finely chopped green bell pepper
- ¼ cup finely chopped celery
- ¼ cup finely chopped carrot
- 2 medium garlic cloves, (minced)
- 6 ounces lean ground turkey
- 6 ounces lean ground beef
- ¼ cup ketchup
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- One 8-ounce can tomato sauce
- Six 1½-ounce whole wheat hamburger buns, (toasted)
Steps

Heat the oil in a large skillet over medium-high heat.

Add the mushrooms, onion, bell pepper, celery, carrot, garlic, ground turkey and ground beef; sauté 5 minutes or until the meat is browned, stirring to crumble. Spoon out any accumulated fat, and discard.

Stir in the ketchup and remaining ingredients (except buns); bring to a boil. Cover, reduce heat, and simmer for 20 minutes, stirring occasionally.

Serve on toasted hamburger buns.
