Ingredients

5 servings
  • 1 pound leftover turkey, (chopped)
  • 1 stalk celery, (diced)
  • ½ medium green bell pepper, (diced)
  • ½ small red onion, (diced)
  • ½ cup dried cranberries
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • salt and pepper, (to taste)
  • 10 slices bread, (toasted)

Steps

  1. Remove any skin from turkey and roughly chop. It's fine to use both white and dark meat for this salad.  Place the turkey in a medium bowl.

  2. Add celery, green bell pepper, and onion to the bowl with the turkey.

  3. Stir in the cranberries, mayonnaise, and vinegar. Stir well to combine. Season with salt and pepper to taste.

  4. Serve on toasted bread.
