Ingredients

6 servings
  • 1 lb mild Italian sausage
  • 2 cloves garlic (minced)
  • 1 medium yellow onion (diced)
  • 1 tsp salt (adjust to taste)
  • 6 cups chicken broth
  • 6 oz tomato sauce
  • 12 oz refrigerated cheese tortellini
  • 1/2 bunch kale (chopped)
  • 1/2 cup heavy cream

Steps

  1. Preheat a deep heavy pot over medium heat. Add in the Italian sausage and cook it until it turns a light shade of brown.

  2. Add in the diced onion and cook for about 5 minutes until softened. Add pressed garlic and season with 1 tsp salt or to taste.

  3. Add chicken broth and tomato sauce. Simmer for 15 minutes.

  4. Stir in the tortellini and simmer for about 5 minutes. You may need to adjust the cooking time depending on the size of your tortellini.

  5. Stir in the chopped kale and heavy cream. Bring to a simmer and cook for another 2-3 minutes or until kale is tender. Remove the heat and serve.
