Ingredients

  • 1 ½ pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil, (divided)
  • 3 whole garlic cloves
  • salt and pepper to taste
  • 3 teaspoons minced garlic
  • ¼ cup honey
  • 3 tablespoons stone ground dijon mustard
  • green onions or fresh parsley for garnish

Steps

  1. In a medium-sized skillet over medium heat, add half of the 2 tablespoons olive oil, and 3 whole garlic cloves.

  2. Season the 1 ½ pounds boneless skinless chicken thighs with salt and pepper to taste, and cook for 3-4 minutes on each side until fully cooked. Remove and set aside.

  3. Add the remaining olive oil and 3 teaspoons minced garlic. Cook for 1-2 minutes until tender, and ¼ cup honey and 3 tablespoons stone ground dijon mustard. Add the chicken back to the pan and heat for a couple of minutes more.

  4. Garnish with green onions or fresh parsley for garnish and serve.
