Ingredients

8 servings
  • 1 salmon filet (3-4 pounds)
  • 2 tablespoons melted butter
  • 1 lemon (divided)
  • salt and black pepper
  • ¾ cup Panko bread crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons shredded Parmesan cheese
  • 1 tablespoon chopped fresh dill
  • 3 cloves garlic (minced)

Steps

  1. Preheat oven to 400°F.

  2. Zest the lemon, and set the zest aside. Cut the lemon in half.

  3. In a small bowl, combine bread crumbs, butter, parsley, Parmesan cheese, dill, garlic, and the reserved lemon zest.

  4. Line a pan with foil and spray with cooking spray.

  5. Place salmon on the pan and brush with melted butter. Season with salt and pepper and squeeze ½ of the lemon over top.

  6. Sprinkle crumb mixture over salmon. Bake uncovered 13-17 minutes or until salmon flakes easily and is cooked.

  7. Cut the remaining lemon into wedges and serve with the salmon.
