Ingredients

8 servings
  • 1 tablespoon butter
  • 1 large onion (diced)
  • 1 meaty ham bone
  • 1 pound Yukon gold potatoes (diced, peeling optional)
  • 3 medium carrots (sliced)
  • 2 ribs celery (sliced)
  • 1 cup frozen corn kernels (thawed)
  • 15 ounces canned cannellini beans (drained and rinsed)
  • 7 cups chicken broth (or water)
  • 2 bay leaves
  • 2 sprigs fresh thyme (or 1 teaspoon dried thyme leaves)
  • ¼ cup chopped fresh parsley

Steps

  1. Cook the onion in butter in a small skillet over medium heat until slightly softened.

  2. Combine all ingredients in the slow cooker.

  3. Cover and cook on high for 6 hours or on low for 9-10 hours.

  4. Remove ham bone, bay leaves and thyme stems (if using fresh thyme).

  5. Chop meat from the bone and add back into the soup. Stir and serve.
