Ingredients

6 servings
  • 3 cups reduced-sodium fat-free chicken broth
  • 3 cups water
  • 1½ cups chopped celery
  • 1½ cups (about 3 medium) sliced carrots
  • 1 cup dried lentils, (rinsed)
  • 6 ounces cooked ham, (diced finely (about 1½ cups))
  • 1 medium onion, (chopped)
  • 1 tablespoon chopped fresh thyme
  • 3 cups baby spinach leaves
  • salt and freshly ground black pepper, (to taste)
  • Parmesan cheese, (for topping (optional))

Steps

  1. In a 4 to 5 quart slow cooker, combine the broth, water, celery, carrots, lentils, ham, onion and thyme. Cover and cook on the low-heat setting for 7 to 8 hours or on the high-heat setting for 3½ to 4 hours.

  2. When ready to serve, stir in the spinach. Ladle the soup into bowls and top with Parmesan cheese, if using.
