- Boil water in a pan. Boil all the main ingredients using a pressure cooker for 20-30 minutes until tender. Lift and drain. Cut into pieces and set aside.
- Heat the oil then saute the ground spices with bay leaves, lime leaves, lemongrass, ginger and galangal until fragrant.
- Add soy sauce, oyster sauce and water. Stir well.
- Add tripe, tomatoes and cayenne pepper. Stir well.
- Season with salt and sugar. Stir well and cook until the sauce thickens and the spices are absorbed. Lift.
- Ready to be served.
- If you don't have a pressure cooker, tripe can be boiled in a regular pan until tender.
