Instructions

  1. Boil water in a pan. Boil all the main ingredients using a pressure cooker for 20-30 minutes until tender. Lift and drain. Cut into pieces and set aside.
  2. Heat the oil then saute the ground spices with bay leaves, lime leaves, lemongrass, ginger and galangal until fragrant.
  3. Add soy sauce, oyster sauce and water. Stir well.
  4. Add tripe, tomatoes and cayenne pepper. Stir well.
  5. Season with salt and sugar. Stir well and cook until the sauce thickens and the spices are absorbed. Lift.
  6. Ready to be served.
  7. If you don't have a pressure cooker, tripe can be boiled in a regular pan until tender.
