Ingredients

4 servings
  • 2 tablespoons tomato paste
  • 1 teaspoon red wine vinegar
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 pound boneless skinless chicken breasts
  • 1 large Roma tomato, (thinly sliced)
  • ½ cup crumbled feta cheese ((use reduced fat for WW))

Steps

  1. In a small bowl, stir together the tomato paste, vinegar, rosemary, oregano, paprika, salt and pepper. Rub the mixture onto the chicken breasts and set aside.

  2. Preheat the broiler. Broil the chicken 6 inches from the heat, turning once- 6 to 8 minutes per side.

  3. Top the chicken with tomato slices and broil for 1 to 2 minutes. Top with the feta and broil until the feta browns slightly .

  4. Serve immediately.
