Ingredients

2 servings
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp dark soy sauce (optional)
  • 6 -6 slices bacon (chopped)
  • 6 ounces lo mein noodles or spaghetti (cooked according to the package )
  • 1 cup snow or snap peas
  • 1 -2 cups shredded swiss chard
  • oil for the pan
  • 2 large eggs

Steps

  1. In a bowl, whisk together the soy sauce, rice vinegar, sesame oil, and dark soy sauce and set aside.

  2. In a wok or frying pan, fry the bacon until it is cooked to your liking. Drain off the bacon fat if there’s a lot of it.

  3. Stir in the vegetables and cook until slightly wilted.

  4. Add the cooked noodles and sauce and stir fry for a bit.

  5. In another frying pan, heat up the oil over medium high heat and cook your eggs as desired.

  6. Enjoy the noodles topped with the eggs!
