Ingredients

8 servings
  • 1 English cucumber
  • ½ teaspoon salt
  • 1 ½ cups plain Greek yogurt (or plain yogurt)
  • 2 tablespoons olive oil
  • 1 ½ teaspooons fresh lemon juice (more to taste)
  • 1 clove garlic (minced)
  • 1 tablespoon chopped fresh dill
  • salt and black pepper (to taste)

Steps

  1. Grate the cucumber using the large holes on a box grater. Place in a fine mesh strainer and toss with salt. Let rest 5 minutes while preparing the other ingredients.

  2. In a medium bowl, combine the yogurt, olive oil, lemon juice, garlic, and dill.

  3. Gently squeeze out the liquid from the cucumber and fold it into the yogurt mixture. Season with salt & black pepper to taste.

  4. Refrigerate for at least 30 minutes before serving. Drizzle with additional olive oil to serve.
