Ingredients

  • 2 minced garlic cloves
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon finely chopped garlic
  • 1½ tablespoons all-purpose flour
  • 2 cups milk
  • 1 teaspoon dried oregano
  • ½ cup loosely packed fresh basil leaves
  • salt and pepper

Steps

  1. Sprinkle and rub 2 minced garlic cloves, 1 teaspoon dried oregano, salt and pepper to taste all over 2 pounds boneless skinless chicken breasts and set aside for ten minutes.

  2. Heat 1 tablespoon butter and 1 tablespoon olive oil in a cast iron skillet, and add the chicken to the pan. Cook for 4-5 minutes on each side or till cooked through and no longer pink based on the size of the breasts. Once the chicken is cooked, transfer it to a plate and cover loosely with foil.

  3. In the same pan, heat the remaining 1 tablespoon unsalted butter and 1 tablespoon olive oil and add the 1 teaspoon finely chopped garlic. Cook the garlic for a minute till fragrant and add 1½ tablespoons all-purpose flour. Cook the flour for a minute and slowly start whisking in 2 cups milk till the sauce thickens.

  4. Simmer the sauce for 2-3 minutes and add the 1 teaspoon dried oregano, ½ cup loosely packed fresh basil leaves, salt and pepper. Stir everything together and add the chicken breasts back to the pan. Simmer the chicken in the sauce for 2 minutes and turn off the flame. Serve hot.
