Crunchy Chicken Salad Wraps
These are made with a delicious, light chicken salad recipe, then all wrapped up!

- 1½ cups chopped cooked chicken breast
- ½ cup light mayonnaise
- ¼ cup diced English cucumber
- ¼ cup minced celery
- 2 whole green onions, (chopped)
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon finely chopped fresh flat-leaf parsley
- salt and freshly ground black pepper, (to taste)
- Four 8-inch low carb flour tortillas
- 4 medium leaves red-leaf lettuce
Steps
In a medium bowl, combine the chicken, mayo, cucumber, celery, green onions, lemon juice, parsley and pepper.
Warm the tortillas in the microwave to make them a bit more pliable. Divide and layer the lettuce and chicken mixture on the tortillas. Roll up, fasten with toothpicks, and cut diagonally in half.
