Ingredients

8 servings
  • 4 boneless skinless chicken breasts (average 7 ounces each)
  • ½ onion (sliced ½" thick)
  • 1 cup chicken broth
  • ½ teaspoon seasoned salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)
  • ½ teaspoon Italian seasoning (or to taste)
  • fresh herbs (a few sprigs)

Steps

  1. In the bottom of crock pot, layer onion, chicken breast, seasonings and herbs. Add broth.

  2. Cook on high for 2 ½ - 3 hours (or on low for 5-6 hours).

  3. Using 2 forks, shred chicken. Stir in some of the juices/broth.
