Ingredients

6 servings
  • 1 pound lean ground beef
  • 1 large yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 (15.5 ounce each) can pinto beans (drained and rinsed)
  • 2 (10 ounce each) can diced tomatoes with chilies (such as Rotel, with juices)
  • 1 (8 ounce each) can tomato sauce
  • 2 cups beef broth
  • 1 cup frozen corn kernels
  • 2 bell peppers (red, yellow or green, diced)
  • 1 (4 ounce each) can mild green chiles (with juices)
  • 1 jalapeño (seeded and finely diced)
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1 teaspoon chili powder
  • toppings as desired (see notes)

Steps

  1. Brown beef, onion, and garlic in a skillet over medium-high heat until no pink remains. Drain any fat.

  2. Place beef mixture in a 6qt slow cooker with remaining ingredients.

  3. Cook on low 6-8 hours or on high 3-4 hours or until veggies are tender.

  4. Serve with your favorite toppings.
