Corned Beef Sandwich
A deli-style corned beef sandwich stacked with Swiss, coleslaw, and tangy dressing on toasted rye. Fast to make, big on flavor, and perfect for leftovers.

Ingredients
2 servings
- 6 ounces sliced corned beef (deli or cooked homemade)
- 4 slices rye bread
- 2 tablespoons Dijon mustard
- 4 slices swiss cheese
- ½ cup prepared colelsaw
- dill pickle slices (optional)
- 2 tablespoons thousand island dressing (or Russian dressing)
Steps

Heat the corned beef in the microwave or a nonstick skillet over medium-low heat until warm. This is optional.

Lightly toast bread. Spread half of the slices with dijon mustard.

Layer with Swiss cheese, corned beef, coleslaw, and dill pickle slices.

Spread thousand island dressing on the remaining slices.

Top sandwiches and serve with a pickle.
