Ingredients

  • ½ cup mayonnaise
  • 2 tablespoons finely chopped fresh basil
  • 1 tablespoon prepared pesto sauce
  • 1 tablespoon water
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon honey
  • ⅛ teaspoon salt
  • ⅛ teaspoon freshly ground black pepper
  • 4 cups finely chopped romaine lettuce
  • 2 cups finely chopped roasted chicken
  • 2 cups corn kernels ((see tips below))
  • 2 cups finely chopped red cabbage
  • 1 cup dry Israeli couscous, (cooked according to package instructions (then cooled))
  • 1 medium red bell pepper, (finely chopped)
  • ½ cup freshly grated Parmesan cheese
  • ½ cup dried currants
  • ½ cup finely chopped pecans

Steps

  1. In a small bowl, whisk together the dressing ingredients. If the dressing seems too thick, whisk in more water 1 teaspoon at a time, until you get a consistency that you're happy with. It should be creamy and thick but pourable.

  2. In a large bowl, toss together all of the salad ingredients. Add the dressing and toss to coat. Divide the salad among 4 bowls and serve.
