Ingredients
4 servings
- ½ cup mayonnaise
- 2 tablespoons finely chopped fresh basil
- 1 tablespoon prepared pesto sauce
- 1 tablespoon water
- 2 teaspoons freshly squeezed lemon juice
- 1 teaspoon honey
- ⅛ teaspoon salt
- ⅛ teaspoon freshly ground black pepper
- 4 cups finely chopped romaine lettuce
- 2 cups finely chopped roasted chicken
- 2 cups corn kernels ((see tips below))
- 2 cups finely chopped red cabbage
- 1 cup dry Israeli couscous, (cooked according to package instructions (then cooled))
- 1 medium red bell pepper, (finely chopped)
- ½ cup freshly grated Parmesan cheese
- ½ cup dried currants
- ½ cup finely chopped pecans
Steps
-
In a small bowl, whisk together the dressing ingredients. If the dressing seems too thick, whisk in more water 1 teaspoon at a time, until you get a consistency that you're happy with. It should be creamy and thick but pourable.
-
In a large bowl, toss together all of the salad ingredients. Add the dressing and toss to coat. Divide the salad among 4 bowls and serve.
