Ingredients

  • 1 ⅓ cups fresh parsley (packed)
  • ⅓ cup olive oil (more as needed)
  • 2 tablespoons fresh oregano (or 2 teaspoons dried oregano)
  • 2 tablespoons minced white onion (or the whites of 2 green onions)
  • 1 tablespoon red wine vinegar
  • 1 clove garlic (minced)
  • ½ teaspoon red pepper flakes (or to taste)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper

Steps

  1. Place all ingredients except red pepper flakes in a food processor and pulse just until slightly chopped.

  2. Stir in red pepper flakes. Add additional oil as needed to reach the desired consistency.

  3. Chill at least 1 hour before serving. Serve over grilled meats
