Ingredients

4 servings
  • 4 boneless skinless chicken breasts (cubed into 1-inch cubes, about 1 ½ lbs)
  • ½ onion (optional)
  • ⅓ cup olive oil
  • 3 tablespoons fresh lemon juice (about 1 lemon)
  • 3 cloves garlic (crushed)
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper

Steps

  1. In a medium bowl or freezer bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the chicken (and onion if using) and toss well to coat.

  2. Refrigerate and allow to marinate for at least 30 minutes or up to 4 hours.

  3. Soak wooden skewers in water for at least 30 minutes.

  4. Remove the chicken from the marinade allowing excess to drip off. Discard the marinade and thread the chicken (and onion if using) onto skewers.

  5. Preheat a grill or a grill pan to medium-high heat. Add the skewers, turning frequently, and cook for 10 to 15 minutes or until chicken is cooked through and reaches 165°F.
