  • 8 ounces lo mein noodles (or spaghetti noodles)
  • 1 pound chicken breast (cubed)
  • 1 tablespoon vegetable oil
  • 1 medium carrot (sliced)
  • 1 red bell pepper sliced

  • 2 cloves garlic (minced)
  • ¼ cup packed brown sugar
  • ¼ cup soy sauce
  • 2 tablespoons hoisin sauce
  • 2 teaspoons sesame oil
  • ¼ teaspoon ground ginger
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon pepper

Steps

  1. Cook your noodles according to the package directions, drain and set aside.

  2. While the noodles are cooking, heat your vegetable oil in a medium sized skillet over medium high heat, add your chicken with some salt and pepper to taste, cook your chicken until it is nearly cooked through. Add the garlic, carrots, red bell pepper, and mushrooms and saute for an additional 3-4 minutes.

  3. In a small bowl, whisk together your garlic, brown sugar, soy sauce, hoisin sauce, sesame oil, ground ginger, red pepper flakes, and pepper.

  4. Add your cooked noodles to the skillet with your chicken and vegetables. Pour your sauce mixture over the skillet and toss to coat, sauteing everything together until your sauce thickens and everything has come together, about 5-8 minutes.

  5. Remove from heat and serve fresh.
