Ingredients

  • 16 ounces frozen sweet cherries (about 3 cups worth)
  • 1 cup heavy cream
  • 1 cup milk
  • ⅓ cup sugar
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips
  • 2 teaspoons coconut oil

Steps

  1. Combine the cherries, cream, milk, sugar, salt, and vanilla in the blender. Puree until completely smooth. Serve immediately for soft-serve ice cream or pour into an ice cream maker and freeze according to the manufacturer's instructions.

  2. While the ice cream is churning, combine the chocolate chips and coconut oil in a small glass bowl. Microwave for 1 minute. Remove from the microwave and stir until smooth. If needed, heat an additional 20-30 seconds. Stir until smooth.

  3. Let cool a bit at room temperature while the ice cream finishes churning. (If it solidifies too much to drizzle while waiting, reheat for 10-15 seconds and stir again.)
