Ingredients

6 servings
  • 1 tablespoon extra virgin olive oil
  • 6 ounces chorizo sausage, (diced)
  • 1 medium onion, (chopped)
  • 3 cups chicken broth
  • 3 cups water
  • One 15-ounce can great Northern beans, (drained and rinsed)
  • One 15-ounce can red kidney beans, (drained and rinsed)
  • One 14.5-ounce can diced tomatoes ((with juices))
  • 1 large potato, (scrubbed and diced)
  • 1 large carrot, (peeled and thinly sliced)
  • ½ teaspoon dried oregano

Steps

  1. Heat the oil in a large pot over high heat. Add the chorizo and onion and cook for 3 minutes, stirring occasionally.

  2. Add the chicken broth, water, beans, tomatoes (with juice), potato, carrot and oregano. Cover and bring to a boil. Remove the cover and simmer on high for 10 minutes or until vegetables are tender, stirring occasionally. Serve immediately.
