Ingredients

  • 1 pomfret (1/2 pound to 1 pound (200 g-400 g))
  • 5 tablespoons minyak goreng
  • 1 teaspoon fish curry powder
  • 1 tomato (cut into wedges)
  • 10 okra kecil
  • 2 sprigs of daun kesum (Vietnamese mint/Vietnamese coriander)
  • salt (to taste)
  • 1 tablespoon palm sugar/sugar
  • 1 clove bawang putih
  • 1 stalk of lemongrass (white part only)
  • 4 bawang merah
  • 8 -10 cabai kering (tergantung pedasnya suka)
  • 1/2 tablespoon belacan (prawn paste)
  • 1 1/4 cup air
  • Tamarind pulp (size of a small ping pong ball)

Steps

  1. Tumbuk pasta bumbu dengan lesung dan alu atau giling dalam food processor. Menyisihkan.

  2. Rendam ampas asam jawa dalam air hangat selama 15 menit sambil terus diperas untuk menghilangkan rasanya. Tiriskan ampasnya dan simpan air asam jawanya.

  3. Panaskan minyak dan goreng pasta bumbu selama 2 menit, atau hingga harum. Tambahkan air asam jawa dan bubuk kari ikan, masak hingga mendidih. Tambahkan irisan tomat, okra, dan daun kesom, lalu didihkan kembali. Tambahkan ikan, garam, dan gula palem atau gula pasir biasa.

  4. Rebus dengan api kecil selama 5 menit, atau sampai ikan matang. Sajikan panas.
