Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅔ cup granulated white sugar
  • ⅓ cup packed light brown sugar
  • ¼ cup (½ stick) butter, (at room temperature)
  • 2 large eggs
  • ½ cup apple cider
  • 2¼ cups peeled and finely diced apples
  • 1 tablespoon freshly squeezed lemon juice

Steps

  1. Preheat the oven to 350°F. Spray a 8x5-inch loaf pan with nonstick spray.

  2. In a medium bowl, sift the dry ingredients (flour through cloves).

  3. In a large bowl, use an electric mixer to cream together the sugars and butter. Beat in the eggs. Add in the flour mixture alternately with the cider- about half at a time, and mix just until combined.

  4. In a small bowl, toss the apples with lemon juice. Stir into the batter.

  5. Scoop the batter into the prepared pan. Bake 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Let cool for at least 20 minutes, then remove to a wire rack and let cool completely.
