Animal Cookie Ice Cream
Frosted circus animal cookies dance through every bite of this memorable ice cream. This is the cookies and cream ice cream of childhood dreams.

Ingredients
- 1½ cups heavy cream
- 1½ cups whole milk
- ⅔ cup sugar
- 1 tablespoon vanilla extract
- ⅛ teaspoon kosher salt
- 3 -4 drops red food coloring (OPTIONAL)
- 9 ounces frosted circus animal cookies
- additional cookies or sprinkles (for serving OPTIONAL)
Steps

Whisk together cream, milk, sugar, vanilla and salt. Add red food coloring and whisk to mix throughout. Adjust the color, as desired. Pour into your ice cream maker and churn according to the manufacturer's instructions. While the ice cream is churning, break the cookies into approximately ½-inch pieces

Scatter about ½ cup of cookie pieces in the bottom of a freezer-safe container. When the ice cream has finished churning, scoop half the ice cream over the cookies in the container, sprinkle the ice cream with 1 cup of cookie pieces. Spread the rest of the ice cream across the container and top with the remaining cookie pieces. Freeze until firm.
