Ingredients

6 servings
  • 1 tablespoon olive oil
  • 1 carrot (sliced)
  • 1 rib celery (sliced)
  • ½ onion (diced)
  • 2 cloves garlic (minced)
  • 5 cups beef broth (reduced sodium)
  • 1 cup water
  • 14 ounces canned diced tomatoes (with juices)
  • 2 tablespoons tomato paste
  • 1 potato (diced)
  • 1 teaspoon Italian seasoning
  • salt and pepper (to taste)
  • 1 cup alphabet noodles (uncooked )

Steps

  1. In a large pot over medium heat, heat oil and add carrots, celery, onion, and garlic. Saute until onion begins to soften.

  2. Add broth, water, tomatoes, tomato paste, potato, and seasonings. Bring to a boil and turn down to a simmer for 15 minutes.

  3. Add alphabet noodles and cook for 7-8 minutes or until noodles are cooked al dente.
