- 1/2 teaspoon onion powder
- 1/4 teaspoon ground cayenne pepper (optional)
- 1 cup freshly grated Monterey Jack cheese
- 6 flour or corn tortillas (fajita/taco size, 6-inch)
- Chopped green onions (optional; for serving)
- Olive oil or cooking spray
