Ingredients

1 servings
  • 1 bundle soba noodles
  • 1 1/2 cups water
  • 2 tablespoons bonito flavored soup base (Mizkan)
  • 1 oz (30g) buna shimeji mushroom
  • 1 bunch baby bok choy
  • 1 hard-boiled egg (halved)
  • white sesame
  • scallion (chopped)

Steps

  1. Heat a pot of water and bring it to a boil. Cook the soba noodles until al dente, about 5 minutes. Drain and set aside in a bowl.

  2. In the meantime, heat 1 1/2 cups of water and bring it to a boil. Add the Mizkan (Bonito Flavored) Soup Base, along with the mushrooms and baby bok choy. Boil for about 1 minute, or until they are cooked.

  3. Add the egg on top of the soba noodles, then pour the soup over them. Top with sesame seeds and scallions.
