Ingredients
- 11 oz edamame ((1 package))
- 3 Tbsp sugar
- ⅛ tsp Diamond Crystal kosher salt
- 2 tsp water ((as needed))
- 4 Japanese rice cake (kiri mochi)
Steps
-
Gather all the ingredients.
-
Add frozen edamame in boiling, unsalted water.
-
Cook on medium heat for 15–20 minutes until tender. They should be softer than regular edamame you eat as a snack. Drain the water.
-
Discard the pods.
-
Using your fingers, push the edamame to remove the thin outer skin.
-
Roughly chop the edamame with the knife (this will facilitate the next step) and transfer to suribachi.
-
Crush and grind the edamame, leaving some pieces chunky.
-
Add the sugar and blend.
-
Add the salt and blend. Salt brings out more flavor without further adding more sugar. Add a little bit of water to make it softer.
-
Cook the rice cakes in boiling water for 4–5 minutes.
-
Remove from the boiling water. Transfer to a plate.
-
Using chopsticks, gently spread out the cooked mochi a bit. Top with the sweet edamame. Serve immediately.
