  • 3 hard-boiled eggs (roughly chopped)
  • 1 tablespoon lemon zest
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
