Ingredients

3 servings
  • 6 ounces avocado (from 1 large Hass)
  • 1 cup 2% cottage cheese (I love Good Culture)
  • 3 1/2 to 4 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons red onion (chopped )
  • ½ medium jalapeño ( with seeds if you want to make it spicy, stemmed)
  • 2 g arlic cloves (minced)
  • 2 tablespoons chopped cilantro (plus more for garnish)
  • ⅛ teaspoon kosher salt
  • ¼ cup chopped tomatoes (for topping)

Steps

  1. In a small food processor, combine the avocado, cottage cheese, lime juice, red onion, ½ jalapeño with seeds, garlic, cilantro and salt. Purée until smooth, transfer to a bowl and top with tomatoes, garnish with cilantro.
