Ingredients
- 1 bag frozen gyoza (/ dumplings of choice~ 1lb)
- 1 can coconut milk (~ 14oz)
- 2 tbsp Thai red curry paste
- 3 cloves garlic (minced)
- 2 tsp ginger (grated)
- 3 cups spinach (or leafy greens of choice)
- green onions (sliced, to finish)
Steps

Preheat the oven to 375°F.

While the oven is heating, in a baking dish, add the coconut milk, curry paste, minced garlic, and ginger. Whisk the ingredients until combined.

Add the vegetables to the dish and toss to coat.

Nestle in the frozen dumplings (no need to defrost), spooning some of the liquid on top of the dumplings.

Cover the dish with an oven safe lid (or foil) and bake for 20-25 minutes, or until the dumplings cook through.

When the dumplings are ready (cut one open to check), finish with green onions and chili crisp. Enjoy!
