Ingredients

  • Two 15-ounce cans black eyed peas or black beans, (rinsed and drained)
  • Two 15-ounce cans pinto beans, (rinsed and drained)
  • Two 15-ounce cans white corn, (rinsed and drained)
  • One 4-ounce can chopped green chiles, (undrained)
  • 1 medium red bell pepper ((cored, seeded and finely chopped))
  • 1 medium green bell pepper ((cored, seeded and finely chopped))
  • 1 small red onion, (finely chopped)
  • 1 bunch fresh cilantro, (rinsed and finely chopped)
  • ½ cup olive oil
  • ½ cup rice vinegar
  • ⅓ cup granulated white sugar
  • ½ teaspoon garlic powder

Steps

  1. Put all dip ingredients in a large bowl. Stir to combine.

  2. In a small saucepan, combine the dressing ingredients. Bring to a boil, then remove from heat and set it aside to cool. Pour the dressing over the bean mixture, and toss to combine.

  3. Cover and refrigerate until ready to serve. Toss again just before serving. Serve with tortilla chips for scooping.
