Ingredients
- 12 -16 ounces chicken or pork Italian sausage (4-5 links)
- 1 red onion (trimmed and cut into 8 wedges)
- 1 yellow onion (trimmed and cut into 8 wedges)
- 2 bell peppers (cut into 1-inch wide strips)
- 3 tablespoons olive oil
- 6 cloves garlic (minced)
- 2 tablespoons fresh rosemary (minced)
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Steps

Preheat oven to 400°F. Place the sausage, onions, and peppers on a large baking sheet. Combine the oil, garlic, rosemary, salt, and pepper in a small bowl and stir to combine. Pour the oil mixture over the sausage and vegetables. Use your hands to stir the pieces around and make sure everything is well coated.
