Ingredients

8 servings
  • 2 medium ripe avocados, (pitted and peeled)
  • ½ cup drained, canned white cannellini beans
  • 2 cloves garlic, (minced)
  • 1 teaspoon minced jalapeno
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh mint
  • 2 teaspoons freshly squeezed lime juice
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper

Steps

  1. Place the avocados, beans, garlic and jalapeño in a mixing bowl, and mash with a fork until chunky. Fold in the cilantro, mint, lime juice, olive oil, salt and pepper.

  2. Cover and refrigerate until ready to serve. Serve with crackers or tortilla chips!
