Ingredients

  • 1 cup uncooked farro ((3 cups cooked))
  • 1 can black beans ((14 ounces) rinsed and drained)
  • 1 cup chopped fresh tomatoes
  • 2 ears fresh corn (cut from the cob (or 1 1/2 cups thawed frozen corn))
  • 1/4 cup chopped red onion (about 1/2 small)
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons plain greek yogurt
  • 1 tablespoons fresh lime juice
  • 1 tablespoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/2 cup chopped fresh cilantro
