Ingredients

8 servings
  • One 8 ounce block (about two cups) sharp Cheddar cheese, (grated)
  • One 8 ounce block (about two cups) mild Cheddar cheese, (grated)
  • ¼ cup cream cheese, (at room temperature)
  • 3 tablespoons mayonnaise
  • 2 tablespoons plain Greek yogurt
  • One 4 ounce jar diced pimentos, (drained with 2 tablespoons liquid reserved)
  • 1 pinch kosher salt
  • 1 pinch freshly ground pepper
  • 1 pinch garlic powder

Steps

  1. In a medium bowl, use a hand mixer to combine the cheddar cheeses, cream cheese, mayonnaise, yogurt, and liquid from the pimentos until creamy and fluffy, about 3 minutes.  Stir in the pimentos and seasonings.

  2. Store refrigerated in an airtight container for up to 1 week.
