Southern Pimento Cheese
You can serve this classic spread with fresh celery and crackers.

- One 8 ounce block (about two cups) sharp Cheddar cheese, (grated)
- One 8 ounce block (about two cups) mild Cheddar cheese, (grated)
- ¼ cup cream cheese, (at room temperature)
- 3 tablespoons mayonnaise
- 2 tablespoons plain Greek yogurt
- One 4 ounce jar diced pimentos, (drained with 2 tablespoons liquid reserved)
- 1 pinch kosher salt
- 1 pinch freshly ground pepper
- 1 pinch garlic powder
Steps
In a medium bowl, use a hand mixer to combine the cheddar cheeses, cream cheese, mayonnaise, yogurt, and liquid from the pimentos until creamy and fluffy, about 3 minutes. Stir in the pimentos and seasonings.
Store refrigerated in an airtight container for up to 1 week.
