Ingredients

  • 1 pound green beans
  • 4 slices bacon (diced)
  • ½ yellow onion (diced)
  • 1 clove garlic (minced)
  • 1 ½ cups chicken broth (or water)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper (or to taste)

Steps

  1. Cut the beans into 1 ½ inch pieces.

  2. In a large skillet over medium heat, add the bacon and fry until crisp. Transfer to a paper towel lined plate reserving the bacon fat.

  3. Add the onion, and cook stirring frequently until it begins to soften, about 3 to 4 minutes.

  4. Add the green beans and garlic and cook for 5 minutes. Stir in the broth, cover, and let simmer for 30 to 60 minutes or until tender.

  5. Uncover, and add the bacon, salt, and pepper. Simmer uncovered for an additional 15 to 20 minutes or until most of the liquid has evaporated.

  6. Taste and season with additional salt and pepper if desired.
