Ingredients

4 servings
  • 4 pounds Yukon gold potatoes
  • 4 cloves garlic (coarsely chopped)
  • ¼ cup melted butter
  • 1 - 1 ½ cups sour cream
  • 2 tablespoons chopped fresh chives
  • salt and pepper to taste

Steps

  1. Peel the potatoes if desired *see note.

  2. Quarter the potatoes, place in a pot of cold salted water with the garlic. Bring to a boil, reduce heat to a simmer and cook uncovered 15 minutes. Drain very well.

  3. Add the melted butter to the potatoes and mash with a hand masher. Add sour cream and continue mashing to reach desired consistency. Stir in chives and season with salt and pepper. Serve hot.
