Slow Cooker Tex Mex Lettuce Wraps
This recipe was so easy and the chicken just shredded perfectly and was so tender. It was delish!

- 1 ½ pounds boneless skinless chicken breast
- 1 package taco seasoning
- 1 jalepeno seeded and sliced
- 1 (16-ounce) jar salsa
- 1 diced yellow onion, (about 1 ½ cups)
- salt, (to taste)
- iceberg lettuce leaves for wrapping
Steps
Spray slow cooker with non-stick cooking spray. Sprinkle the taco seasoning on the chicken breasts and lay them on the bottom of the slow cooker.
Put the diced onion and jalapeño over the top of the chicken breasts, and pour salsa on top.
Cover and cook chicken on low for 4-5 hours.
Take the cooked chicken out of the slow cooker and shred it. Place it back in the slow cooker and stir to combine. Add salt to taste.
To serve place about ¼ of the chicken mixture in the center of the lettuce wrap and roll up! Enjoy!
