Ingredients

  • 1½ pounds boneless skinless chicken breasts
  • 3 cups chopped 1 1/2 inch potatoes
  • 3 tablespoons oil
  • 1 tablespoon italian seasoning
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • fresh herbs for garnish (optional)

Steps

  1. In a large bowl combine 1½ pounds boneless skinless chicken breasts and 3 cups chopped 1 1/2 inch potatoes. Drizzle with 3 tablespoons oil and stir to coat. Sprinkle 1 tablespoon italian seasoning, 1 teaspoon garlic powder, and salt and pepper to taste, then toss to coat well.

  2. Transfer to 6 quart slow cooker. Cover and cook on low for 4-6 hours until chicken is cooked through and potatoes are fork tender.

  3. Sprinkle fresh herbs for garnish, like oregano, and thyme, and serve.
