Ingredients

4 servings
  • 12 ounces brussels sprouts, (trimmed and quartered)
  • 4 large shallots, (peeled and quartered lengthwise)
  • 1 cup seedless red grapes
  • 2 tablespoons balsamic vinegar ((more for serving, if desired))
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • freshly ground black pepper, (to taste)
  • 4 sprigs fresh rosemary or thyme

Steps

  1. Preheat the oven to 400℉.

  2. In a large bowl, combine the brussels sprouts, shallots, grapes, vinegar, olive oil, salt and pepper, and toss well.

  3. Spread the mixture in an even layer on a sheet pan and nestle in the fresh herb sprigs. Roast until the brussels sprouts are tender and the grapes burst, about 20 minutes.
