Ingredients

5 servings
  • 2 tbsp olive oil
  • 1 small white onion, (chopped)
  • 1 medium red bell pepper, (chopped)
  • 3 cloves garlic (minced)
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoons ground coriander
  • 1/2 teaspoon chili powder
  • 28 oz canned diced tomatoes, (with sauce )
  • salt and ground black pepper
  • 5 eggs
  • 2 tablespoons feta cheese, (crumbled)
  • fresh parsley, (for garnish)

Steps

  1. In a large skillet on medium high heat, add the olive oil, and the chopped pepper and onion. Cook for 5 minutes or until the onion becomes translucent.

  2. Add the minced garlic, paprika, cumin, coriander, and chili powder. Stir the spices into the peppers and onions and cook an additional minute.

  3. Stir in the canned tomatoes. Turn the heat down to a simmer. Cook the tomatoes for about 15 minutes, or until the tomatoes break down and become a thick sauce.

  4. Make 5 small wells in the sauce using the back of a spoon. Carefully crack an egg into each well.

  5. Cover the pan with a lid and cook for 5-7 minutes, or until the eggs are done to your liking. Be careful not to over cook the eggs, they should be slightly runny.

  6. Season with salt and pepper to taste.

  7. Garnish with crumbled feta and chopped parsley.
