🍒 Sate Ayam Maranggi (Maranggi-style Grilled Chicken Skewers)

Ingredients

4 servings
  • 500 g daging ayam fillet (paha lebih empuk) - 500 g Chicken fillet (thighs preferred for tenderness) πŸ”ͺ Cut into medium-sized cubes; don’t cut too small so the meat stays juicy
  • Tusuk sate (bamboo skewers) – as needed πŸ‘‰ Soak in water beforehand to prevent burning
  • 6 siung bawang merah - 6 cloves shallots
  • 4 siung bawang putih - 4 cloves garlic
  • 1 sdt Ketumbar - 1 tsp coriander seeds
  • 2 cm jahe - 2 cm ginger
  • 2 cm lengkuas - 2 cm galangal
  • 1 cm kencur - 1 cm aromatic ginger
  • 1 batang serai - 1 stalk lemongrass (use the white part only)
  • 2 butir kemiri - 2 pcs candlenuts
  • 2 sdm gula merah - 2 tbsp palm sugar
  • 5 sdm kecap manis - 5 tbsp sweet soy sauce
  • 2 sdm Air asam jawa - 2 tbsp tamarind water
  • 1 sdt garam - 1 tsp salt
  • 1/2 sdt merica bubuk - 1/2 tsp ground pepper
  • 2 sdm minyak goreng supaya bumbu menempel rata - 2 tbsp cooking oil (to help the marinade coat evenly)
  • 10 buah Cabai rawit merah (sesuai selera pedas)
  • 1 buah tomat merah
  • 4 siung bawang merah
  • secukupnya Garam & gula –

Steps

  1. Campur semua bumbu halus dengan kecap manis, air asam, dan minyak. Eng : Mix all the blended spices with sweet soy sauce, tamarind water, and cooking oil.

  2. Masukkan potongan ayam, aduk rata sampai bumbu meresap sempurna. Eng : Add the chicken pieces and stir until they’re evenly coated with the marinade.

  3. Diamkan minimal 1 jam (lebih enak kalau semalaman di kulkas). Eng : Let marinate for at least 1 hour (best if left overnight in the refrigerator).

  4. Tusuk ayam ke tusukan sate. Eng : Thread the chicken pieces onto the skewers.

  5. Bakar di atas bara api atau grill di pan sambil sesekali dioles sisa bumbu marinasi. Eng : Grill over charcoal or a grill pan, brushing occasionally with the remaining marinade.

  6. Bolak-balik sampai matang dan agak gosong di pinggir (biar aroma khas sate muncul). Eng : Turn the skewers occasionally until the chicken is cooked through and slightly charred on the edges for that signature satay aroma. Optional : Bisa di torch lagi sebentar sebelum dihidangkan / di oven 180 derajat selama 5 menit

  7. Goreng semua bahan sambal tomat sebentar, ulek kasar, dan beri sedikit air jeruk limau.Eng : Lightly fry all Maranggi-style Tomato Chili Sauce ingredients, grind or mash coarsely, and add a splash of lime juice for freshness.
