Ingredients

8 servings
  • 10 ounces romaine lettuce, (chopped)
  • 1 ½ cups grilled chicken breast, (chopped)
  • 1 tablespoon taco seasoning
  • 1 yellow bell pepper, (diced)
  • 1 cup cherry tomatoes, (quartered)
  • 1 can black beans, (drained and rinsed)
  • 1 can corn, (drained)
  • 1 avocado, (diced)
  • ¼ cup black olives, (sliced)
  • ½ cup queso fresco, (crumbled)
  • ¼ cup cilantro, (chopped)
  • salt and pepper to taste
  • tortilla strips, (optional for garnish)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 2 teaspoons cilantro, (minced)
  • 3 tablespoons lime juice
  • 3 tablespoons Southwest Seasoning
  • salt and pepper to taste

Steps

  1. Wash and chop 10 ounces romaine lettuce, and place it in a large bowl. Add the 1 ½ cups grilled chicken breast, to a separate bowl with 1 tablespoon taco seasoning and toss to coat the chicken evenly. Add the seasoned chicken to the bowl of lettuce.

  2. Add in 1 yellow bell pepper, 1 cup cherry tomatoes,1 can black beans, 1 can corn, 1 avocado, ¼ cup black olives, ½ cup queso fresco, and ¼ cup cilantro,. Season the salad with salt and pepper to taste.

  3. In a medium bowl, whisk together 1/2 cup sour cream, 1/2 cup mayonnaise, 1/2 cup milk, 2 teaspoons cilantro, 3 tablespoons lime juice, 3 tablespoons Southwest Seasoning, and salt and pepper to taste.

  4. Pour the dressing over the salad and toss to evenly mix all the ingredients before serving with tortilla strips, .

  5. Enjoy fresh!
