Ingredients

2 servings
  • 1 medium plum tomato
  • ½ small onion, (roughly chopped)
  • 1 medium garlic clove, (chopped)
  • 1 small jalapeño, (seeded and roughly chopped)
  • 1 teaspoon cider vinegar
  • ½ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • 2 to 3 dashes Tabasco sauce ((or another hot sauce))
  • Two 4-ounce salmon filets

Steps

  1. Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper.

  2. In the bowl of a food processor, add the tomato, onion, garlic, jalapeño, vinegar, chili powder, cumin, salt and hot sauce; process until finely chopped and uniform.

  3. Place the salmon in the prepared pan; spoon the salsa on top. Roast until the salmon is just cooked through, 12 to 15 minutes.
